Pumpkin Chocolate Chip Muffins

4 eggs
2 cups sugar (or substitute maple syrup or honey)
16 oz. pumpkin puree
1 1/2 cup oil (or applesauce)
2 cups freshly ground flour
1 cup white flour
2 tsp. baking soda
2 tsp. baking powder
1 tsp. cinnamon
1 tsp. salt
1 cup chocolate chips


Mix wet ingredients with sugar. Add dry ingredients. Stir just until moistened.
Fill muffin tins. Bake at 400 for 16-18 minutes.
